It seems that we should add an asparagus dish to our late summer barbecues.
A study conducted by the Institute of Medical Science and Jeju National University in Korea revealed that the amino acids and minerals in asparagus extract protect liver cells against toxins from alcohol use (a copy of this study can be found through the Institute of Food Technologists web site).
The Michigan Asparagus Advisory Board also recommends asparagus’ consumption because of its wealth of nutrients (folic acid, potassium, thiamin and vitamin B6) and its low sodium and calorie content.
